My children and I adore pancakes and have a Pancake Sunday tradition. When I need to make pancakes quickly, I typically use a pancake mix that is readily available in supermarkets and give it a special twist.
Our secret? Mashed bananas! š They make our pancakes extra moist, fluffy, and oh-so-delicious.

Matcha Pancake RecipeĀ
Ingredients:
8 ounces milk
2 large eggs
2 ounces butter (1/2 stick), melted
1 teaspoon vanilla extract
2 medium size bananas, mashed
8 ounces flour (1 1/2 cups)
2 Tbsp sugar
2 Tbsp matcha powder
2 tsp baking powder
1 tsp salt
Procedure:
- In a bowl, sift together the flour, baking powder, salt, and sugar to ensure a smooth batter consistency.
- In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
- Gradually pour the milk and egg mixture into the flour mixture, whisking continuously until you achieve a smooth batter. Gently fold in the mashed bananas for that extra fruity flavor.
- Heat a frying pan over medium heat and melt a small amount of butter. Pour approximately 1/4 cup of batter into the pan for each pancake.
- Once bubbles start to form on the surface of the pancake, flip it over and cook until both sides are golden brown.
